Organic Steel Cut Oats with Blueberries and Agave Nectar

Standard

This is a filling, fiber rich breakfast that will make you never want to go back to the “instant” oats you may be used to.

Cook Time: 15 min

Serves: 1

Ingredients:

  • 1/3 C. Organic Steel Cut Oats
  • 1 C. Water
  • 1/3 C. Fresh Organic Blueberries
  • 1 TBS. Light Agave Nectar
  • Cinnamon optional

Instructions:

  1. Cook oats in water for 15 min on medium, stirring often.
  2. Place in bowl and top with berries, agave, and cinnamon.

I truly feel blessed to live in a city that has so many great farmer’s markets at my dispose. Just about any day of the week there is a market open to get those farm fresh goodies you have been craving…rain or shine I might add! What’s your favorite market?

♦South Austin’s Markets:

Barton Creek Farmers Market 

Hours: Saturdays

9:00am to 1:00pm rain or shine.

Location: On the back side of the Barton Creek Square mall parking lot overlooking the city—at the intersection of S. Loop 1 (Mopac) and S. Capital of Texas Highway (Loop 360). 

Details:

This is a great market that’s fun for the whole family and your pups! They carry a wide range of locally raised meats, locally grown produce, internationally prepared food, artisan breads and baked goods, as well as artisan crafts and gifts.

SFC Farmers’ Market at Sunset Valle

Hours: Saturdays

Open Year-Round, Rain or Shine
9 am to 1 pm September – April

8:30 am to 12:30 pm May – August

Location:

3200 Jones Road, at the Toney Burger Center
Plenty (17 acres!) of free parking
Off Hwy. 290/71 eastbound access road, just east of the intersection of Brodie Lane and Hwy. 290/71 East Follow signs for the parking area (plenty!)

South Austin Farmers Market

Hours: Saturdays

8am-1pm, year round

Location:  Parking lot of El Gallo Restaraunt on South Congress Avenue, across the street from St. Edwards University.

♦Central Austin’s Markets

Hope Farmers’ Market

Hours: Sundays

11am-3pm

Location: 414 Waller St. They are located in the heart of East Austin at the historic Pine Street Station. You can find them at the corner of East 5th and Waller St, just north of the train tracks.

♦North Austin Markets

SFC – Triangle

Hours: Wednesdays

Location:

4600 Lamar (46th Street and Lamar), Triangle Park at The Triangle

Here are some great recipes using local farm fresh ingredients, enjoy! 

Chicken Breast Baked in Phyllo Dough Stuffed with Goat Cheese and Orange Marmalade

Standard

This is a super easy meal to make that tastes wonderful, I served the chicken with a gemelli pasta and brussel spouts!

Prep: 10 min

Cook: 20 min

Serves: 2

Ingredients:

  • 2 chicken breasts
  • 16 sheets of phyllo dough
  • 1 egg
  • 4 TBS of goat cheese (I like Cheesy Girls “Hottie” goat cheese, she’s a local Texan cheese maker I met at Central Market).
  • 2 TBS of orange marmalade (get some good stuff, not Smuckers).
  • I cup of whole wheat gemelli pasta, uncooked
  • 2 small campari tomatoes, cubed
  • 2 tBS of parmesan cheese, freshly grated
  • 2 TBS of butter
  • 1 TBS olive oil
  • 1 shallot, minced
  • 1 garlic clove, minced
  • 1 sprig of rosemary, finely chopped
  • Pinch of salt and pepper
  • 2 cups of brussel sprouts

Instructions:

  1. Pre-Heat Oven to 400
  2. Season chicken with rosemary, salt, and pepper on both sides.
  3. Cook chicken in a skillet for 2.5 min on each side to brown in olive oil (5 min total).
  4. Set chicken aside and brown garlic and shallot in skillet and set aside (this is for gemelli).
  5. Lay out 8 sheets of the phyllo dough square (large enough to wrap the chicken in) lay down 1 TBS orange marmalade and on top of that lay 2 TBS of goat cheese then place breast on top and fold phyllo around the chicken seal edges with egg wash and brush on top of wrapped chicken.  Repeat with other breast on remaining 8 sheets.
  6. Bake in oven for 12-15 min on 400 degrees.

Gemelli Pasta

  1. Bring 2 quarts of salted water to a boil add pasta and cook to al dente
  2. Strain and transfer back to pot and add 1 TBS of butter, tomatoes, reserved garlic and shallot mixture, parmesan cheese, and salt, pepper, and rosemary to taste.  Mix well

Serve with brussel sprouts or your green of choice!
