Hand ground and chopped: Pork Belly and Pork Tenderloin. Sausage is made with fire roasted poblanos, Brooklyn East India Pale Ale, spices, and A LOT of LOVE.  Smoked low and slow with hickory to perfection.  

Served on a sweet kolache roll, slathered with homemade organic mustard, shaved pickled JBG fennel, and topped with crispy fried shallots.
