Quick Chicken Salad on Double Fiber Toast

Serves: 1

Ingredients

  • 3/4 Cup Chicken (canned, rotisserie breast, or freshly cooked by you).
  • 2 TBS olive oil mayo
  • 1 TBS Mustard (dijon or yellow is fine).
  • 2 TBS dill pickles, chopped
  • 2 TBS onion, chopped
  • 1/4 Cup Celery, chopped
  • 2 TBS fresh goat cheese
  • Dash of salt, pepper, and paprika
  • Nature’s Own Double Fiber Wheat Bread, one slice

Instructions

  1. Toast bread
  2. Chop produce
  3. Mix all ingredients
  4. Place chicken mixture on top of toast
  5. Top with crumbled goat cheese
  6. Serve with carrots and celery
