<p><strong>Prep:</strong> 20 min</p>
<p><strong>Cook Time:</strong> 1-1.5 hrs</p>
<p><strong>Serves:</strong> 4</p>
<h3>Ingredients:</h3>
<ul>
<li>1 whole chicken (fryer works well), about 3.5 lbs</li>
<li>.5 Cup Dried dates, chopped roughly (pitted)</li>
<li>.5 Cup Roasted peanuts</li>
<li>1 Cup Whole wheat rice</li>
<li>8 Cups Chicken stock</li>
<li>3 Cups water</li>
<li>1/2 Cup ginger, peeled and chopped into inch x inch cubes (remove after cooking)</li>
<li>2 Cloves of garlic, peeled and split in half (remove after cooking)</li>
<li>1/2 Cup Soy sauce, light</li>
<li>Cilantro</li>
</ul>
<h3>Instructions:</h3>
<ol>
<li>In a medium bowl, mix uncooked rice, dates, and peanuts together. Stuff washed chicken with mixture. Tie legs together with twine.</li>
<li>In large pot add broth, water, ginger, and garlic. Bring to a boil.</li>
<li>Add chicken breast down making sure broth and water mixture goes into the cavity where the rice mixture is.  Bring back to a boil.</li>
<li>Reduce to simmer, for 40 min. Flip and cook for at least 20 more min. At and of an hour check rice texture for doneness. Cook longer if needed.</li>
<li>Remove chicken from broth, and set aside. Strain broth and reserve broth adding the soy sauce to it.</li>
<li>Remove rice mixture and quarter chicken to plate serve with a garnish of cilantro and side of broth.</li>
</ol>

<p><strong>Ingredients</strong>:</p>
<p>Meat or cheese mixture of your choice, meat should be pre-cooked. I used bison.</p>
<p><strong>Dough</strong>:</p>
<ul>
<li>1.5 C. All purpose Flour</li>
<li>3 Eggs</li>
<li>1 tsp Salt</li>
<li>1 TBS Olive Oil</li>
</ul>
<p><strong>Sauce</strong>:</p>
<ul>
<li>2 Cups Chopped tomatoes with juice.</li>
<li>1 TBS Olive oil</li>
<li>1 TBS Garlic, minced</li>
<li>2 TBS Fresh Basil, chopped</li>
<li>2 TBS Shallots, minced</li>
<li>Mushrooms, 1/2 Cup, sliced</li>
</ul>
<p><strong>Directions</strong>:</p>
<p><strong>Dough</strong></p>
<p>In an electric mixer fitted with a dough hook, combine flour and salt. Add eggs 1 at a time and continue to mix. Drizzle in oil and continue to incorporate all the flour until it forms a ball. Sprinkle some flour on work surface, knead the dough until elastic and smooth. Wrap the dough in plastic wrap and let it rest for about 30 minutes to allow the gluten to relax.</p>
<p>Cut the ball of dough in half, cover and reserve the dough you are not immediately using to prevent it from drying out. Dust the counter and dough with flour. Form the dough into a rectangle and roll it through the pasta machine, 2 or 3 times, at its widest setting. Guide the sheet of dough with the palm of your hand as it emerges from the rollers. *Reduce the setting and crank the dough through again, 2 or 3 times. Continue until the machine is at its narrowest setting. The dough should be paper-thin, about 1/8-inch thick.</p>
<p>Dust the counter and dough with flour, lay out the long sheet of pasta. Use a heart cookie cutter (small) to cut the hearts.</p>
<p>Place a tsp of your meat/cheese mixture of choice on one heart and seal with another heart on top. Seal edges with fork or pastry sealer. Use</p>
<p>Boil in large pot of salted water for about 7 min. Strain.</p>
<p><strong>Sauce</strong>:</p>
<ul>
<li>In a large braiser or skillet, heat oil, add shallots and garlic, cook for 1 min until fragrant.</li>
<li>Add tomatoes and mushrooms, simmer for 20 min.</li>
<li>Garnish with basil</li>
</ul>
<p>Enjoy!</p>

Marx Foods send you a box of sample sized goodies and the rules are simple:  You have to use at least two ingredients and then blog the recipe. This time around there will be 2 winners, one from internal vote and one from public vote (that me means YOU, my dear friends). Voting will begin on Tuesday at which point I will add the new link to my blog. Then you can check out all the recipes and vote for your favorite one!  The winners get $100 in Marx Food Store Credit and you know I need that BAD!!! I&#8217;m all out of  YUZU juice! <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p>I chose to use the Bamboo Rice, Cardamom, and the Mint Herb Crystals to create a Kiwi and Mango Nigiri. This was a tasty and whimsical play on dessert and sushi that I will be making it again for sure, probably for a dinner party. The cardamom infused bamboo rice was subtle yet alluring and the slight crunch of the crystalized mint paired surprisingly well with the mango and bamboo rice.  I couldn&#8217;t resist doing kiwi not only because it&#8217;s green but also because I love it and the little seeds gave a great texture to the nigiri. The nigiri was then served with a orange honey marmalade and rice wine sauce. Overall it was a fun dish, to eat and to make!</p>

<p><strong>Serves:</strong> Makes 8 Nigiri</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li><span style="line-height:13px;">.5 Cup <a href="http://www.marxfoods.com/Bulk-Bamboo-Rice">Bamboo Rice</a></span></li>
<li>1 Cup Water</li>
<li>1 tsp Rice wine vinegar</li>
<li>5<a href="http://www.marxfoods.com/Bulk-Whole-Cardamom"> Cardamom pods</a> broken crushed with seeds</li>
<li>1 Kiwi</li>
<li>1 Mango</li>
<li>1 tsp<a href="http://www.marxfoods.com/Mint-Herb-Crystals"> Crystalized Mint</a></li>
<li>4 Mint leaves, small</li>
<li>Marmalade</li>
</ul>
<p><strong>Instructions:</strong></p>
<ol>
<li><span style="line-height:13px;">Boil 1 Cup of water add crushed cardamom pods and seeds, let sit for 10 min on simmer. Strain and reserve water for rice. </span></li>
<li>Add rinsed bamboo rice to water bring to a boil, add 1 tsp rice wine vinegar, cover and simmer for 20 min or until done.</li>
<li>Cut up kiwi and mango thinly to arrange on top of rice.</li>
<li>Let rice cool for about 20-30 min.</li>
<li>Make 8 nigiri mounds with your hands and place fruit on top and garnish with crystalized mint and real mint.</li>
<li>Serve with honey orange marmalade with a splash of rice wine.</li>
</ol>
<p>Enjoy with a glass of wine!</p>

This time we gave it a go at home. It was awesome!</p>
<p><strong>Prep:</strong> 24 hrs (if you can wait that long)</p>
<p><strong>Cook Time:</strong> 15-17 min per batch</p>
<p><strong>Serves:</strong> 4 with sides</p>

<p><strong>Ingredients</strong>:</p>
<ul>
<li>4 Thighs and 4 drums (separated) with the skin on.</li>
<li>2 Cups Buttermilk</li>
<li>1 Jalapeno</li>
<li>1 tsp salt and 1 tsp pepper</li>
<li>2 Cups all purpose flour</li>
<li>2 Eggs, beaten</li>
<li>Peanut oil for frying</li>
<li>More salt and pepper</li>
</ul>
<p><strong>Instructions</strong>:</p>
<ol>
<li><span style="line-height:13px;">Blend jalapeno, buttermilk, salt, and pepper in a blender or food processor.</span></li>
<li>In a large glass mixing bowl: add marinade and chicken and cover with plastic wrap, let sit overnight.</li>
<li>Heat peanut oil up in fryer to 325 degrees F.</li>
<li>Add 1/2 tsp salt and 1 tsp pepper to flour.</li>
<li>Take chicken out of marinade and let sit for about 20 min on a baking sheet just to warm them up a bit so the fryer oil doesn&#8217;t drop drastically. Pat dry, dredge in flour, then egg wash, then flour again.</li>
<li>Fry pieces in several batches, how many will depend on your fryer&#8217;s size. Fry for 15-17 min.</li>
<li>Place on wire rack and keep warm in oven if you are doing several batches.</li>
</ol>
<p>Serve with cayenne honey and a side of collard greens and a starch <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I did mashed sweet potatoes. Mmmm!</p>

<li><span style="line-height:13px;">1 Cup cooked green lentils</span></li>
<li>10 Large raw shrimp, peeled and deveined, leave tail on.</li>
<li>1/2 Cup carrot, cubed</li>
<li>1/2 Cup fennel, shaved</li>
<li>1/4 Cup shallots, shaved</li>
<li>2 TBS balsamic vinegar</li>
<li>3 TBS olive oil</li>
<li>Pinch of <a href="http://www.marxfoods.com/Home?search=dill+pollen&amp;ext=F">dill pollen</a></li>
<li>Salt</li>
<li>Pepper</li>
</ul>
<p><strong>Instructions</strong>:</p>
<ol>
<li>Make a vinaigrette with balsamic, 1 TBS olive oil, pinch of dill pollen, pinch of salt and pepper. Mix well.</li>
<li><span style="line-height:13px;">Roast veggies on foil lined pan with 1 tbs olive oil and salt and pepper pinch for 20-25 min. Reserve in foil to keep warm. </span></li>
<li>Heat medium skillet to high and saute shrimp in a TBS of olive oil, season with salt and pepper.</li>
<li>Mix roasted veggies, lentils, and vinaigrette together and serve shrimp on top.</li>
<li>Enjoy!</li>

<li><em>6-8 organic chicken thighs, remove fat (the ones I had were small so we had 2 each)</em></li>
<li><em>2.5 cups no sodium chicken stock ( I like homemade or Kitchen Basics)</em></li>
<li><em>1 cup blend of wild rice and lentils (pick your favorite)</em></li>
<li><em>1 cup sliced cremini mushrooms</em></li>

<p><strong>Instructions</strong>:</p>
<ol>
<li><em><span style="line-height:13px;">Place stock in pot, add rice, veggies,oil, and herbs: stir.<br />

<li><em>Add chicken thighs to pot, season lightly with salt and pepper. </em></li>
<li><em>Cook for 4 hours on high or 8 hours on low. ( I do 4 on high)</em></li>
<li><em>Serve, salt and pepper to taste. </em></li>

<strong>Serves:</strong> 2</p>
<p><strong>Ingredients</strong>.</p>
<ul>
<li>2-3 lamb loins</li>
<li>2 garlic cloves, minced</li>
<li>1 TBS fresh parsley, chopped</li>
<li>.5 TBS fresh thyme, remove from stem</li>
<li>.5 tsp sea salt</li>
<li>.5 tsp pepper</li>
<li>Butter</li>
</ul>
<p><strong>Instructions</strong></p>
<ol>
<li>Heat sous vide to 134 F.</li>
<li>Chop garlic and herbs and blend together with salt and pepper.</li>
<li>Coat loins with herb and garlic mixture on both sides.</li>
<li>Cut 3 slices if butter and place on top of loin</li>
<li>Vacuum seal loins separately in bags</li>
<li>Submerge in water bath for a minimum of 2 hrs and max of 4 hrs.</li>
<li>Once done seat on hot oiled grill for 1 min on each side.</li>
